The food is as honest and transparent as any in the world. Andros Taverna is in the north end of Logan Apartments, an enormous recently completed development along Milwaukee Avenue in Logan Square.

The restaurant is next to a forthcoming green space, and around the corner from the Logan Square Farmers Market. But many of those restaurants, including icons like The Parthenon and Pegasus Restaurant and Taverna, have closed as rents increased and diners flocked to nearby Fulton Market dining destinations.

Psaltis hopes to set Andros Taverna apart by focusing on a lighter and more modern view of the cuisine. The restaurant will feature a custom-built rotisserie hearth and a wood-burning oven. They are small, airy and light. Instead of heavy, they are a complement to the meal. Chen, who has worked as a pastry chef at The French Laundry and Jean-Georges Restaurants, plans to serve a wide array of pastries, especially for brunch on weekends.

She says to look for items like an olive and pistachio twist Danish and a chocolate halva tart. We worked in several restaurants in various cities together. It works for us. But they have designed the space to adapt to the situation.

But it was a good time for us to go in different directions. Both Chen and Psaltis are excited about the smaller footprint and neighborhood feel of Andros Taverna.
